Nightshade Free Cream of Mushroom Soup

One thing I really miss not being able to eat nightshades is cream of mushroom soup, and all the dishes that use it as a main ingredient.
 
So, I created my own recipe, and honestly even if I could eat nightshades, I would never go back to canned cream of mushroom soup.
 
 
 

Nightshade Free Cream of Mushroom Soup Recipe


Ingredients
  • 1 stick butter
  • 4 cups sliced mushrooms, diced
  • 1 red onion, diced
  • 1/4 cup minced garlic
  • 1/4 cup liquid aminos
  • 1 quart whipping cream
  • salt and pepper to taste

Melt the butter over medium heat and add the mushrooms and onion. Cook until the mushrooms shrink and the onions turn clear.

Add the minced garlic and liquid aminos. Cook over medium heat for 10 minutes.

Add 1 quart whipping cream and turn the soup down to medium-low heat. Simmer for 45 minutes.

Add salt and pepper to taste.

* I have used this recipe to make green bean casserole, and it is fantastic.

Just add green beans and dried onions (always make sure they are nightshade free) and cook for 45 minutes at 350.
