Gingered Pork Stir Fry Recipe

Do you like Chinese food? I love it. Unfortunately, I can't have it very often. Here is a recipe I have on my Delicious Chinese Recipes page. I hope you enjoy it!

Gingered Pork Stir Fry

1 (3/4 lb.) pork tenderloin
2 tbsp. fresh ginger, peeled and grated
1 cup chicken broth
2 tbsp. teriyaki sauce
2 tsp. cornstarch
2 tsp. canola oil
1/2 lb. snow peas (remove strings)
1 medium zucchini, halved lengthwise and sliced
4 green onions, cut into 2 inch pieces

In mixing bowl, stir pork and ginger. In a separate small bowl, mix chicken broth, teriyaki sauce, and the cornstarch. Heat 1 tsp. of the canola oil in a wok or nonstick 12" skillet over medium to high heat until hot. Add vegetables and cook until lightly browned but still crisp--stir often. Put in a bowl.

Add remaining tsp. of canola oil to the wok, add pork and ginger mixture and stir quickly and constantly until the pork is done. Transfer pork mixture to bowl with the vegetables. Stir the cornstarch, chicken broth, and teriyaki mixture, then add to the skillet. Heat to boiling, and cook for 1 minutes or until it thickens. Stir in the pork and vegetables. Stir for three minutes, or until heated through. Serve with rice or noodles. Makes 4 servings.
