Easy Mexican Food Recipe: Fiesta Pie with Chipotle Cornbread Topping

With a little more research, I am extremely thankful we decided to stop using a microwave. Microwave ovens cause cancer, can cause obesity, and from what I can understand, can also cause dementia. Charles and I are both sleeping better and having fewer digestive problems since we quit using the microwave. He brought up the fact that if we are going to be consistent with this, we will have to quit eating out since most restaurants use microwaves in their kitchens. Today's recipe is an easy Mexican food recipe: Fiesta Pie with Chipotle Cornbread Topping. Enjoy!

Fiesta Pie with Chipotle Cornbread Topping

Brown and drain:
1 lb. ground beef

Sauté:
1/3 cup chopped green peppers
1/3 cup chopped onion
1 clove garlic minced

Stir in:
1 cup salsa
1 cup frozen corn
1 pkg. taco mix

In a separate bowl, mix:
1/3 cup milk
1 egg
½ cup sour cream
half a stick of butter, melted
1 pkg. corn muffin mix
3 chipotle chilies, seeded and chopped

Don’t beat, but mix lightly. Spoon on top of meat mixture. Bake at 400 degrees F for 30-35 minutes. Sprinkle top with cheese and bake until cheese is melted.
